The 2009 Mistress Pinot Noir is sourced from
the biodynaical and organicly farmed Presidio Vineyard. Produced
as a side project by David Yates. Here at Jaffurs we are "married"
to the Rhone varietals, hence the Mistress name for this burgundy
varietal wine. Produced and farmed with the same gentle, exacting
methods as our Syrahs. It is clean and refrained, with flavors
of tea and flower petals. It is a nod to our friends in Burgundy
above the Rhone Valley in France.

Fermentation Fruit was stemmed, not crushed.
Intact, whole berries fermented
in small boxes for 14 days after a 48 hour cold soak
Barrel Aging 17% new French oak (Sirugue), 33%
one year old French barrels, 50% older French barrels. No mid
term racking.
Cellar notes Unfined, unfiltered, all natural
acidity
